These Pink Bounty Bars are not only a yummy Valentine’s Day treat, but they are made with only 5 ingredients, include a veggie, and are sweetened with fruit!! I totally recommend saving this simple recipe to make for your favorite valentine!

The filling is sweetened with dates, a dried fruit I love using to sweeten my desserts. Dates are the perfect natural sweetener, so your valentine will never guess there are beets inside! Plus, dates are chock-full of antioxidants, potassium, fiber, and are low-glycemic. 

Pink Bounty Bars

These Pink Bounty Bars are not only a yummy Valentine’s Day treat, but they are made with only 5 ingredients, include a veggie, and are sweetened with fruit!

Ingredients

  • 1/2 cup coconut cream (the solid part at the top of a refrigerated can of coconut milk)
  • 1/3 cup chopped beets
  • 1 cup packed pitted dates
  • 1 3/4 cups unsweetened coconut flakes
  • 1 cup dark chocolate

Instructions

  • Soak the dates in hot water for 5 minutes while you blend the coconut cream and beets together. Squeeze the excess liquid out the the dates and process with the beets and coconut cream until a sticky mixture is obtained. Add the coconut and process on low until mixed together.
  • Microwave the chocolate until melted, stopping every 30 seconds to stir. Pour the chocolate in the bar mold,coating the bottom and sides. Place in the refrigerator to harden.
  • Once chocolate has set, scoop & press the coconut mixture into the molds. Cover with chocolate and refrigerateagain until the chocolate is firm.
  • Enjoy! These are best stored in the fridge
