This Avocado Egg Salad is one of our favorite weeknight meals because it’s so quick to make and the kids LOVE it! All you need are hard boiled eggs, avocados, spices and you’re ready to go!

My go-to method for making hard boiled eggs for this Avocado Egg Salad is using the InstantPot

I have tried so many different methods for making hard boiled eggs, but the best method I have found is definitely making them in the InstantPot. The eggs peel SO easily, which is the best part about this method. 

To make hard boiled eggs in the InstantPot:

1) Place a dozen eggs on the wire rack in the instant pot. Add 1 cup of water. 

2) Close the lid, making sure the steam release handle is in the sealed position. 

3) Cook on Manual for 5 minutes. Let the Instant Pot release naturally for 5 minutes, and then do a quick release. 

4) Place eggs in an ice bath for 5 minutes before peeling.

Ingredients

  • 1 dozen hard boiled eggs chopped
  • 2 avocados peeled, pitted, and mashed
  • 1 tbsp lime juice
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Instructions

  • Mix together all of the ingredients in a large bowl. Serve as a sandwich, with plantain chips, or veggies!
