Pink Bounty Bars
These Pink Bounty Bars are not only a yummy Valentine’s Day treat, but they are made with only 5 ingredients, include a veggie, and are sweetened with fruit!

- 1/2 cup coconut cream (the solid part at the top of a refrigerated can of coconut milk)
- 1/3 cup chopped beets
- 1 cup packed pitted dates
- 1 3/4 cups unsweetened coconut flakes
- 1 cup dark chocolate
Soak the dates in hot water for 5 minutes while you blend the coconut cream and beets together. Squeeze the excess liquid out the the dates and process with the beets and coconut cream until a sticky mixture is obtained. Add the coconut and process on low until mixed together.
Microwave the chocolate until melted, stopping every 30 seconds to stir. Pour the chocolate in the bar mold,coating the bottom and sides. Place in the refrigerator to harden.
Once chocolate has set, scoop & press the coconut mixture into the molds. Cover with chocolate and refrigerateagain until the chocolate is firm.
