I love these energy balls because they’re chock-full of protein, healthy fats, and are sweetened only with dates! Dates add fiber, nutrients, antioxidants and other polyphenols to the diet, plus they’re naturally deliciously sweet with a lower glycemic index than sugar!

Paleo Gingerbread Energy Balls

Ingredients

  •  1 cup dates  soaked in hot water for 5 minutes to soften
  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1/2 cup unsweetened coconut flakes
  • 2 tsp cinnamon
  • 1/4 tsp ginger

Instructions

  • Process together all of the ingredients, stopping occasionally to scrape the sides.
  • Lightly wet your hands and roll into balls. Enjoy!
