I made these Breakfast Tacos for the kids for their first day of school. They thought it was such a fun special breakfast! This would also be a fun birthday breakfast!

I made the pancakes ahead of time so in the morning the kids just filled them with yogurt and added their favorite toppings! The kids really enjoyed the special breakfast!

I made the pancakes ahead of time so in the morning the kids just filled them with yogurt and added their favorite toppings! The kids really enjoyed the special breakfast!

Ingredients

  • 2 cups GF oats
  • 1 1/2 cup nut milk (as the mixture thickens, you may need more)
  • 2 eggs
  • 1 ripe banana
  • 1 tsp cinnamon
  • 1 tsp vanilla (or 1 scoop vanilla protein powder)
  • 1 tsp baking powder

Other Ingredients

  • Plain greek yogurt + honey to taste
  • favorite toppings: sliced fruit, granola, sprinkles, nut butter, etc

Instructions

  • Blend the oats until it turns into a flour. Then add the remaining ingredients and blend everything together.
  • Pour batter out onto a greased pan and cook on medium heat until bubbles appear. Flip and cook another minute.
  • Add the greek yogurt and desired toppings and enjoy!
