GF Breakfast Tacos
I made the pancakes ahead of time so in the morning the kids just filled them with yogurt and added their favorite toppings! The kids really enjoyed the special breakfast!

- 2 cups GF oats
- 1 1/2 cup nut milk (as the mixture thickens, you may need more)
- 2 eggs
- 1 ripe banana
- 1 tsp cinnamon
- 1 tsp vanilla (or 1 scoop vanilla protein powder)
- 1 tsp baking powder
Other Ingredients
- Plain greek yogurt + honey to taste
- favorite toppings: sliced fruit, granola, sprinkles, nut butter, etc
Blend the oats until it turns into a flour. Then add the remaining ingredients and blend everything together.
Pour batter out onto a greased pan and cook on medium heat until bubbles appear. Flip and cook another minute.
Add the greek yogurt and desired toppings and enjoy!
