How To Soften Dates For The Samoas

The easiest method is just to heat a cup of water, place the dates in the water, and let them soak while you add all of the other ingredients to the food processor. By the time you add the rest of the ingredients, they should be nice and soft! Drain the water and add the dates to the food processor!

Ingredients

  • 1 large apple
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup pitted dates soaked in hot water for 10 minutes to soften
  • 1/2 tbsp cashew butter
  • 1/2 tsp vanilla extract
  • pinch of sea salt
  • 1/4 cup dark chocolate melted

Instructions

  • In a food processor, blend the coconut, dates, cashew butter, vanilla, and a pinch of salt until smooth. If needed, add 1–2 tsp warm water to help it blend.
  • Slice apples horizontally into ¼-inch thick rings and remove the core (use an apple corer or small cookie cutter to make perfect “donut” shapes).
  • Spread a spoonful of the coconut-date caramel onto each apple slice. Drizzle with melted dark chocolate.
  • Place the finished apple slices on a parchment-lined tray and chill for 10–15 minutes to help the chocolate set.
