Samoa Apples

Servings: 5 apple slices
- 1 large apple
- 1/2 cup unsweetened coconut flakes
- 1/2 cup pitted dates soaked in hot water for 10 minutes to soften
- 1/2 tbsp cashew butter
- 1/2 tsp vanilla extract
- pinch of sea salt
- 1/4 cup dark chocolate melted
In a food processor, blend the coconut, dates, cashew butter, vanilla, and a pinch of salt until smooth. If needed, add 1–2 tsp warm water to help it blend.
Slice apples horizontally into ¼-inch thick rings and remove the core (use an apple corer or small cookie cutter to make perfect “donut” shapes).
Spread a spoonful of the coconut-date caramel onto each apple slice. Drizzle with melted dark chocolate.
Place the finished apple slices on a parchment-lined tray and chill for 10–15 minutes to help the chocolate set.
