Sausage, Sweet Potato, and Kale Soup
Ingredients
- 1 lb ground sausage
- 1 tbsp olive oil
- 2 tsp minced garlic
- 1 medium onion, chopped
- 2 medium sweet potatoes, peeled and chopped into cubes
- 12 oz baby Bella mushrooms, sliced
- 6 cups chicken stock
- 3 tbsp apple cider vinegar
- 1 tbsp dried basil
- 1 tsp sea salt
- 1/4 tsp pepper
- 5 cups kale, chopped
Instructions
- Sauté the sausage in the olive oil until no longer pink.
- Add the onions and sauté until they turn translucent. Add the garlic and cook another minute.
- Add the chicken stock. sweet potatoes, baby Bella mushrooms, apple cider vinegar, basil, salt, and pepper and raise heat until it reaches a boil. Once boiling, simmer for 10 minutes, or until the sweet potatoes soften.
- Add the kale and cook for a couple minutes, or until the sausage is heated and the kale softened.
