Sausage, Sweet Potato, and Kale Soup

Servings: 6
- 1 lb ground sausage
- 1 tbsp olive oil
- 2 tsp minced garlic
- 1 medium onion, chopped
- 2 medium sweet potatoes, peeled and chopped into cubes
- 12 oz baby Bella mushrooms, sliced
- 6 cups chicken stock
- 3 tbsp apple cider vinegar
- 1 tbsp dried basil
- 1 tsp sea salt
- 1/4 tsp pepper
- 5 cups kale, chopped
Sauté the sausage in the olive oil until no longer pink.
Add the onions and sauté until they turn translucent. Add the garlic and cook another minute.
Add the chicken stock. sweet potatoes, baby Bella mushrooms, apple cider vinegar, basil, salt, and pepper and raise heat until it reaches a boil. Once boiling, simmer for 10 minutes, or until the sweet potatoes soften.
Add the kale and cook for a couple minutes, or until the sausage is heated and the kale softened.
