Ingredients & Nutritional Benefits
One of my favorite things about these Soccer Rice Krispie Treats is that they’re made with simple ingredients you can feel good about serving. While they’re definitely a fun treat, a few thoughtful ingredient swaps add protein, healthy fats, and nutrients you won’t find in traditional marshmallow-based Rice Krispie treats.
Grass-Fed Butter
Grass-fed butter adds richness and helps bind the treats together. It also contains fat-soluble vitamins like vitamins A, D, E, and K, along with beneficial fatty acids that aren’t typically found in conventional butter.
Honey
Honey provides natural sweetness and helps create the chewy texture that makes these treats so irresistible. Unlike refined sugar, honey contains small amounts of antioxidants and trace minerals.
Peanut Butter (or Cashew Butter)
Peanut butter contributes protein, healthy fats, and a creamy texture that helps hold the cereal together. It also provides nutrients like magnesium, vitamin E, and niacin.
If you prefer a milder flavor, cashew butter is a great alternative and contains copper, magnesium, and heart-healthy fats.
Collagen
Collagen helps give these treats structure while adding a boost of protein. It’s also rich in amino acids that support healthy skin, hair, nails, joints, and connective tissues.
Plain Full-Fat Kefir
Kefir adds a subtle tangy flavor and helps create a softer texture. As a fermented dairy product, kefir contains probiotics that support gut health, along with protein, calcium, and vitamin B12. I love using Lifeway Kefir!
Vanilla Extract
Vanilla enhances the flavor of the treats and brings warmth and sweetness without adding additional sugar.
Sea Salt
A small pinch of sea salt balances the sweetness and enhances all of the other flavors.
Crispy Rice Cereal
Crispy rice cereal creates the classic crunch and light texture that makes Rice Krispie treats so fun to eat. Using a gluten-free variety makes this recipe suitable for those avoiding gluten.
Dark Chocolate
Dark chocolate is used to create the soccer ball decorations and provides a rich chocolate flavor. Depending on the cacao percentage, dark chocolate may contain antioxidants called flavonoids, which have been studied for their potential health benefits.
White Chocolate
White chocolate helps create the soccer ball pattern and edible grass decoration. It adds sweetness and contrast, making the soccer-themed design really pop.
Natural Green Colorant
Natural food colorings allow you to create vibrant decorations without artificial dyes. Depending on the product used, natural colorants may be derived from ingredients like spirulina, spinach, turmeric, or vegetable juices.
