Paleo No Bake Samoa Cookies

When I was a Girl Scout, Samoas were my favorite cookies! Once Girl Scout cookie season began, I knew I needed to come up with a healthier option. These Paleo No Bake Samoa cookies require only 5 ingredients and are ready in no time!

Paleo Samoas are so easy to make!

What’s so nice about this recipe, is you just throw all of the ingredients in the food processor, and the cookie dough is ready! There is no need to bake, just freeze for a couple of minutes.

Easiest way to get the classic Samoa cookie look

You can definitely make these as regular cookies, but I like them to look like the classic Girl Scout Samoa Cookie, so I use a smoothie straw to punch a hole in the middle. Sometimes I need to use my fingers to reshape the cookie. 

Then I dip the bottom of the cookie in chocolate and pipe chocolate all over the top of the cookies.

Samoa Ingredients

  • Shredded Coconut – Make sure it’s unsweetened. I like to toast my coconut, but if you don’t want to turn on the oven at all, you don’t have to toast it. 
  • Pitted Dates – Any variety of date works! Just make sure to remove the pit if it’s not already pitted. I recommend soaking the dates in a cup of hot water for about 5 minutes to soften the dates before blending. 
  • Dark Chocolate – Make sure it’s paleo if you want to keep the recipe paleo.  
  • Vanilla Extract – I’m a big fan of pure vanilla extract. 
  • Cashew Butter – I like using cashew butter because it doesn’t have a strong flavor, but if you don’t have cashew butter at home, you can substitute with another nut/seed butter!

Why do I sweeten my samoas with dates?

Dates are a wonderful natural sweetener! They are full of fiber, which prevents blood sugar spikes and aids with digestion. They are also full of antioxidants, vitamins, and minerals to aid in immunity and heart health.

How to soften dates for the samoas

The easiest method is just to heat a cup of water, place the dates in the water, and let them soak while you add all of the other ingredients to the food processor. By the time you add the rest of the ingredients, they should be nice and soft! Drain the water and add the dates to the food processor!

Can I make a double batch?

Yes, I make a double batch most times I make this recipe. It usually takes a little longer to process everything, but as long as your food processor is large enough, it will work! 

There are still pieces of dates in my dough, what can I do?

As long as you have a high-powered food processor and you soaked the dates, they just need more time processing.

Paleo No Bake Samoa Recipe

It’s Girl Scout cookie season, so I had to share my 5-ingredient Samoas!

Ingredients

  • 1 cup coconut flakes toasted, if desired
  • 1 cup pitted dates
  • 1 tbsp cashew butter
  • 1/2 teaspoon vanilla
  • 1/2 cup dark chocolate paleo

Instructions

  • Preheat the oven to 350 degrees, if toasting the coconut. Soak the dates in a hot water. Spread the coconut out evenly on a baking sheet and bake for 5 minutes, or until the coconut is a light golden. Be careful not to let it burn.
  • In a food processor, process together the dates, toasted coconut, cashew butter, & vanilla on high until smooth, stopping occasionally to scrape down the sides.
  • Use a tablespoon cookie scoop to form balls and flatten them on a cookie sheet lined with parchment paper. If desired, use a smoothie straw to create a hole in the middle, reshaping if necessary. Place in the freezer.
  • Microwave the chocolate, stopping every 30 seconds to stir, until melted. Dip the bottom of the cookies in the chocolate, lightly scraping off the excess. Spoon the remaining chocolate into a plastic bag, snip off a small corner, and drizzle the chocolate over the cookies.

Notes

These are best stored in the refrigerator.
