Healthy Smash Cake

This smash cake recipe I have made for all three of my kids. It’s their traditional first birthday cake and I love that it’s sweetened only with fruit!

We were on vacation for Evelyn’s actual first birthday, so I made her a cake for her actual birthday and her birthday party. Both had icing sweetened with fruit as well (blueberry and strawberry). The strawberry was definitely the better choice – the skins of the blueberry make it a little bit jelly-like. 

There’s really nothing better than watching a baby enjoy their smash cake! It truly makes me so happy seeing them dive in with their tiny, cute hands!

This cake is gluten-free, dairy-free, and paleo to keep it allergy friendly. It does have eggs and almond butter, but if your little one has an allergy to either of those, feel free to use an egg replacer and/or seed butter instead.

Ingredients

For the cake:

  • 3 very ripe bananas
  • 1 tbsp almond butter
  • 1/4 cup coconut oil melted
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/4 cup nut milk
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3 tbsp coconut flour
  • 1 1/4 cups almond flour

For the icing:

  • 2/3 cup chopped berries
  • 1/4 cup coconut butter melted

Instructions

  • Preheat the oven to 350 degrees and lightly grease 2 mini round pans.
  • Blend together the bananas, almond butter, coconut oil, eggs, vanilla, and nut milk until smooth. Mix in the cinnamon, baking powder, baking soda, coconut flour, and almond flour.
  • Pour the batter into the pans and bake for 20-30 minutes (depending on pan size), until a toothpick comes out clean.
  • While the cake bakes, make the icing by blending together the berries and coconut butter.
  • Once the cakes cool, decorate the cakes, and enjoy celebrating your little one!
