Healthy Smash Cake

For the cake:
- 3 very ripe bananas
- 1 tbsp almond butter
- 1/4 cup coconut oil melted
- 2 eggs
- 2 tsp vanilla extract
- 1/4 cup nut milk
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 3 tbsp coconut flour
- 1 1/4 cups almond flour
For the icing:
- 2/3 cup chopped berries
- 1/4 cup coconut butter melted
Preheat the oven to 350 degrees and lightly grease 2 mini round pans.
Blend together the bananas, almond butter, coconut oil, eggs, vanilla, and nut milk until smooth. Mix in the cinnamon, baking powder, baking soda, coconut flour, and almond flour.
Pour the batter into the pans and bake for 20-30 minutes (depending on pan size), until a toothpick comes out clean.
While the cake bakes, make the icing by blending together the berries and coconut butter.
Once the cakes cool, decorate the cakes, and enjoy celebrating your little one!
