These Chicken Parm Bites are a favorite dinner in our house! The chicken gets so perfectly crispy in the air fryer and the layer of sauce and melty cheese is just perfect!

Ingredients

  • 3 cups crisp rice cereal
  • 3/4 teaspoon each paprika, sea salt, & pepper
  • 2 tablespoons avocado oil mayonnaise
  • 1.25 lbs chicken thighs, cubed
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Add the cereal and spices to a gallon sealable bag and roll with a rolling pin until the cereal is broken down.
  • In a bowl, mix together the mayo and chicken cubes. Add a few chicken cubes to the bag. Shake the bag until the chicken cubes are completely coated.
  • Remove the chicken from the bag and place in the air fryer basket in a single layer. Continue until there is no more room at the bottom of the basket. Air fry at 400 degrees for 10 minutes.
  • Top the chicken with marinara sauce and mozzarella cheese. Air fry for another minute, or until the cheese melts.
  • Enjoy! (You may need to do another round depending on how big your air fryer is.)
