Healthy Strawberry Shortcake Bars (Gluten-Free, Refined Sugar-Free)

2 Mins read

If you’re looking for a healthy twist on a nostalgic favorite, these Healthy Strawberry Shortcake Bars are your new summer go-to! Made with simple, wholesome ingredients like ripe bananas, fresh strawberries, and a crunchy coating of freeze-dried berries and vanilla cookies, these bars are refined sugar-free, gluten-free (depending on cookie choice), and delicious.

They’re easy to prep ahead, perfect for hot days, and packed with real fruit—plus a hidden boost of protein if you add your favorite vanilla protein powder.

Healthy Strawberry Shortcake Bars Ingredients

Banana – Naturally sweetens the bars and adds creaminess. Rich in potassium and fiber.

Strawberries – Loaded with vitamin C, antioxidants, and bright flavor.

Vanilla extract – Enhances the dessert-like flavor without added sugar.

Nut milk – Helps blend the mixture to a creamy consistency. Almond or cashew milk works great.

Vanilla protein powder (optional) – Boosts the protein content, making these bars a great post-workout treat or filling snack. I used Peachie Spoon Vanilla Protein Powder. You can use the code HEALTHYHOLME12 to save $$!

Freeze-dried strawberries – Intensifies strawberry flavor and adds a crisp texture for the coating.

Vanilla cookies – Choose gluten-free or paleo cookies for a healthy crunch. Brands like Simple Mills or Hu Kitchen work well.

Tips for the best healthy Strawberry Shortcake Bars

  • Use very ripe bananas for the sweetest and creamiest texture.

  • Let the popsicles thaw just a few minutes—this helps the coating stick better.

  • If your coating doesn’t stick well, lightly mist the bars with water before rolling.

  • Store extra bars in an airtight container with parchment between layers to prevent sticking.
