Christmas Pancakes

Whip up these gluten-free Christmas pancakes for a festive holiday breakfast! Featuring Santa, Reindeer, and Elf designs, these pancakes are made with wholesome ingredients like oats, banana, and nut milk.

Ingredients

  • 2 cup gluten-free oats
  • 1 1/2 cups nut milk (add more if needed)
  • 2 eggs
  • 1 tsp vanilla extract (or 1 scoop vanilla protein powder)
  • 1 tsp baking powder
  • Santa: raspberries or strawberries, bananas, blueberries or chocolate chips
  • Reindeer: date, raspberry, banana slices and blueberries
  • Elf: raspberries or strawberries, dates, banana slices and blueberries

Instructions

  • Blend oats into a fine flour.
  • Add nut milk, eggs, banana, vanilla, and baking powder to the blender. Blend until smooth.
  • Heat a greased pan over medium heat. Pour batter to form pancakes of desired size.
  • Cook until bubbles appear, flip, and cook for an additional minute.
  • Decorate:
    Santa Pancake: Use 1 large pancake. Create a raspberry hat, banana beard, and blueberry or chocolate chip eyes. 
    Reindeer Pancake: Use 1 large pancake for the head, a small pancake for the snout, and two smaller ones for ears. Add banana slices topped with blueberries for eyes and dates for antlers.‍ 
    Elf on the Shelf Pancake: Use 1 large pancake. Decorate with banana triangles, a raspberry hat and cheeks, date hair and mouth, and banana slices topped with blueberries for eyes.
