Christmas Pancakes
Whip up these gluten-free Christmas pancakes for a festive holiday breakfast! Featuring Santa, Reindeer, and Elf designs, these pancakes are made with wholesome ingredients like oats, banana, and nut milk.

- 2 cup gluten-free oats
- 1 1/2 cups nut milk (add more if needed)
- 2 eggs
- 1 tsp vanilla extract (or 1 scoop vanilla protein powder)
- 1 tsp baking powder
- Santa: raspberries or strawberries, bananas, blueberries or chocolate chips
- Reindeer: date, raspberry, banana slices and blueberries
- Elf: raspberries or strawberries, dates, banana slices and blueberries
Blend oats into a fine flour.
Add nut milk, eggs, banana, vanilla, and baking powder to the blender. Blend until smooth.
Heat a greased pan over medium heat. Pour batter to form pancakes of desired size.
Cook until bubbles appear, flip, and cook for an additional minute.
Decorate: Santa Pancake: Use 1 large pancake. Create a raspberry hat, banana beard, and blueberry or chocolate chip eyes. Reindeer Pancake: Use 1 large pancake for the head, a small pancake for the snout, and two smaller ones for ears. Add banana slices topped with blueberries for eyes and dates for antlers. Elf on the Shelf Pancake: Use 1 large pancake. Decorate with banana triangles, a raspberry hat and cheeks, date hair and mouth, and banana slices topped with blueberries for eyes.
