Ingredients

  • 1 lb ground sausage
  • 1 tbsp olive oil
  • 2 tsp minced garlic
  • 1 medium onion, chopped
  • 2 medium sweet potatoes, peeled and chopped into cubes
  • 12 oz baby Bella mushrooms, sliced
  • 6 cups chicken stock
  • 3 tbsp apple cider vinegar
  • 1 tbsp dried basil
  • 1 tsp sea salt
  • 1/4 tsp pepper
  • 5 cups kale, chopped

Instructions

  • Sauté the sausage in the olive oil until no longer pink.
  • Add the onions and sauté until they turn translucent. Add the garlic and cook another minute.
  • Add the chicken stock. sweet potatoes, baby Bella mushrooms, apple cider vinegar, basil, salt, and pepper and raise heat until it reaches a boil. Once boiling, simmer for 10 minutes, or until the sweet potatoes soften.
  • Add the kale and cook for a couple minutes, or until the sausage is heated and the kale softened.
