Grilled Peach & Burrata Salad
Juicy grilled peaches, creamy burrata, peppery arugula, cherry tomatoes and crunchy pistachios are tossed with a simple honey Dijon dressing in this easy grilled peach and burrata salad. It's the perfect summer side dish for BBQs, dinner parties and warm-weather gatherings.

Salad
- 4 ripe but firm peaches halved and pitted
- 5 oz arugula
- 1 cup cherry tomatoes halved
- 8 oz burrata
- 1/4 cup pistachios roughly chopped
- 2 oz prosciutto torn into pieces, optional
Honey Dijon Dressing
- 2 tablespoons olive oil
- 1 1/2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- Salt and pepper to taste
Make the dressing: Whisk together olive oil, apple cider vinegar, honey, Dijon, salt and pepper.
Grill the peaches: Heat a grill or grill pan over medium-high heat. Lightly brush the cut sides of the peaches with olive oil. Grill cut-side down for 2–3 minutes, until grill marks form and the peaches are slightly softened. Flip and grill for another minute.
Build the salad: Add arugula and tomatoes to a large bowl. Toss with about half of the dressing.
Add the good stuff: Arrange the grilled peaches and torn burrata over the greens. Sprinkle with pistachios and add prosciutto, if using.
Finish: Drizzle with the remaining dressing and serve immediately.
