Dark Chocolate Almond Nice Cream Bars

Almond butter nice cream covered in a dark chocolate shell topped with chopped almonds and drizzles of almond butter and more dark chocolate is an epic treat on a hot day!

Ingredients

  • 1 1/2 cups dark chocolate, melted paleo
  • 1 cup almond butter + 2 tbsp to drizzle
  • 2 bananas
  • 1 1/2 tsp vanilla extract
  • 3/4 cup almond milk
  • 1/4 cup almonds, chopped

Instructions

  • Cover the bottom and sides of the molds with melted dark chocolate. Place in the freezer for 2 minutes. Add a 2nd coat of chocolate to the sides (make sure you can’t see the mold through the chocolate). Place in the freezer for 2 more minutes.
  • Blend together the almond butter, bananas, vanilla, and almond milk. Pour into the molds.
  • Add the chopped almonds and drizzle on the almond butter and remaining dark chocolate. Place in the freezer for an hour.
  • Gently remove the bars from the molds. Enjoy!
