High-Protein Thai Peanut Chicken Ramen (30-Minute Dinner)

4 Mins read

If you’re looking for an easy, comforting dinner that’s packed with protein and flavor, this High-Protein Thai Peanut Chicken Ramen is going to become a new favorite! Tender chicken, ramen noodles, and colorful veggies are tossed in a creamy Thai-inspired peanut sauce made with coconut milk, peanut butter, coconut aminos, and fresh lime juice.

This recipe has the perfect balance of savory, slightly sweet, and tangy flavors, with just enough spice if you like a little heat. Plus, it’s made in one pot in about 30 minutes, making it perfect for busy weeknights!

Unlike traditional ramen, this version has a rich, creamy peanut broth that’s almost like a sauce. It’s cozy, satisfying, and packed with protein to keep you full.

Why You’ll Love This Thai Peanut Chicken Ramen

  • High in protein: Chicken breast, peanut butter, and protein-enriched noodles make this a filling, protein-packed meal.

  • Ready in 30 minutes: Perfect for those busy nights when you need something quick and easy.

  • One-pot meal: Everything cooks in one pot, meaning fewer dishes to wash!

  • Creamy without heavy cream: Coconut milk and peanut butter create a deliciously rich and creamy sauce.

  • Easy to customize: Switch up the veggies, adjust the spice level, or use your favorite protein.

  • Gluten-free option: Simply choose gluten-free ramen noodles and check the labels on your other ingredients.

  • Family-friendly: The spice level is completely customizable, so everyone can enjoy it!

Easy Substitutions and Variations

One of my favorite things about this recipe is how easy it is to customize with ingredients you already have!

Make It Vegetarian

Swap the chicken for cubed extra-firm tofu or shelled edamame and use vegetable broth instead of chicken broth.

Use a Different Protein

You can easily replace the chicken breast with shrimp, ground chicken, or thinly sliced beef. Just adjust the cooking time accordingly.

Add More Vegetables

Broccoli, mushrooms, snap peas, zucchini, and bok choy would all be delicious additions to this ramen.

Make It Extra Spicy

Add additional sriracha, chili garlic sauce, or crushed red pepper flakes.

Make It Nut-Free

Replace the peanut butter with sunflower seed butter and skip the chopped peanut topping. The flavor will be different, but you’ll still get a creamy, savory sauce.

Use Regular Ramen Noodles

If you don’t have high-protein noodles, regular gluten-free rice ramen works perfectly. Just keep in mind that the finished meal will contain less protein.

FAQs

Is Thai Peanut Chicken Ramen Gluten-Free?

It can be! Use certified gluten-free ramen noodles and double-check that your coconut aminos, broth, sriracha, and other packaged ingredients are gluten-free.

Can I Make This Recipe Without Coconut Milk?

Yes! You can replace the coconut milk with additional chicken broth for a lighter, less creamy version.

However, I love the richness and subtle coconut flavor that the coconut milk adds to the peanut sauce.

Can I Use Almond Butter Instead of Peanut Butter?

Absolutely! Creamy almond butter is a great alternative, although the flavor will be slightly different.

How Can I Make This Ramen Higher in Protein?

Use protein-enriched ramen noodles, add extra chicken breast, or top each serving with a soft-boiled egg.

You can also add shelled edamame for additional plant-based protein.

Is This Thai Peanut Ramen Spicy?

Not necessarily! The sriracha is completely optional. Without it, the ramen has a mild, creamy peanut flavor that’s great for kids.

If you enjoy spicy food, add as much heat as you’d like!

Can I Make Thai Peanut Ramen Ahead of Time?

Yes, but I recommend storing the noodles separately from the peanut broth until you’re ready to serve.

This prevents the noodles from absorbing too much liquid and becoming overly soft.

What Does Coconut Aminos Taste Like?

Coconut aminos have a savory, slightly sweet flavor similar to a milder soy sauce. They’re made from coconut sap and salt and add delicious umami flavor to the peanut broth.

Tips for Making the Best High Protein Thai Peanut Chicken Ramen

Use natural creamy peanut butter. Peanut butter is the base of the sauce, so using a smooth, natural variety will give you the best flavor and texture. Stir it well before measuring if the oil has separated.

Don’t overcook the noodles. Ramen noodles cook quickly, and they continue absorbing liquid as they sit. Check the package directions and remove the pot from the heat as soon as they’re tender.

Adjust the consistency. This recipe makes a creamy, saucy ramen rather than a traditional thin broth. If you prefer a soupier ramen, simply add more chicken broth.

Add the lime juice to taste. Fresh lime juice helps balance the richness of the peanut butter and coconut milk. Taste the finished ramen and add an extra squeeze if needed.

Make it as spicy or mild as you like. Skip the sriracha for a kid-friendly version, or add extra if you love spicy ramen.

Serve immediately. This ramen is best enjoyed fresh, while the noodles are tender and the sauce is creamy.
