Ingredients

Chocolate Mousse

  • 3/4 cup chocolate chips dark or milk; refined sugar–free if desired
  • ¼ cup coconut cream the thick part at the top of a chilled can of coconut milk
  • ¼ cup kefir

Chocolate Ganache

  • ½ cup chocolate chips
  • ¼ cup coconut cream
  • 2 tbsp plain kefir

Instructions

Whip the coconut cream

  • The night before, place your cans of coconut milk in the refrigerator. A half hour before starting, place the mixing bowl and whisk in your refrigerator to chill.
  • Whip 1/4 cup coconut cream (only the thick part at the top of a chilled can of coconut milk) until soft peaks form.

Make the mousse

  • Melt the chocolate chips until smooth. Let cool slightly, then whisk in the kefir until glossy and fully combined. Gently fold in whipped coconut cream.

Chill

  • Spoon the mousse into small cups or jars and refrigerate for at least 1–2 hours, until set.

Prepare the ganache

  • Heat coconut cream until warm (not boiling). Pour over chocolate chips and let sit for 1 minute, then stir until smooth.
  • Let cool to room temperature and then stir in the kefir. Refrigerate for 10-15 minutes until thickened like soft frosting.
  • Using a hand mixer, whip for 30 seconds until it gets lighter in color, fluffy, and holds soft peaks.

Top the mousse

  • Pipe the ganache over each mousse cup and let it set slightly.

Decorate the reindeer

  • Pipe chocolate on a baking sheet lined with parchment paper into antler shapes and freeze for 5 minutes. Once hardened, insert into the ganache. Another option is to add pretzels for the antlers.
  • Draw two eyes on the front of each cup.
  • Attach a red pom-pom or candy for the nose.

Chill or serve

  • Refrigerate until ready to serve, or enjoy immediately once set.
