- 1 cup 100% cranberry juice not cocktail
- 1/2 cup fresh lime juice from the limes, top off with bottled if needed
- 2 –3 tbsp honey to taste
- 2 tbsp grass-fed gelatin like Vital Proteins or Great Lakes
- Optional: 1/2 tsp beet powder for a deeper red hue
- Optional decorations: sugar crystals or chia seeds to mimic seeds
Instructions
Prep the Lime Rinds
- Cut the limes lengthwise and use a spoon to scoop out the flesh, creating small "cups." Set the juice aside.
Stabilize the Halves
- Place each lime half in a mini muffin tin or nestle them on a crumpled foil-lined tray so they don’t tip when filled.
Bloom the Gelatin
