Set inside scooped lime rinds, they look just like tiny watermelon slices—perfect for parties, picnics, or healthy kid-friendly snacks. Gluten-free, dye-free, and naturally sweetened!

Ingredients

  • 6 limes halved lengthwise and scooped out
  • 1 cup 100% cranberry juice not cocktail
  • 1/2 cup fresh lime juice from the limes, top off with bottled if needed
  • 2 –3 tbsp honey to taste
  • 2 tbsp grass-fed gelatin like Vital Proteins or Great Lakes
  • Optional: 1/2 tsp beet powder for a deeper red hue
  • Optional decorations: sugar crystals or chia seeds to mimic seeds

Instructions

Prep the Lime Rinds

  • Cut the limes lengthwise and use a spoon to scoop out the flesh, creating small "cups." Set the juice aside.

Stabilize the Halves

  • Place each lime half in a mini muffin tin or nestle them on a crumpled foil-lined tray so they don’t tip when filled.

Bloom the Gelatin

  • In a small bowl, sprinkle gelatin over 1/4 cup of cranberry juice. Let bloom for 5 minutes.

Heat the Juice

  • Warm the remaining 3/4 cup cranberry juice and 1/2 cup lime juice in a small saucepan (do not boil). Stir in the honey and beet powder if using.

Combine

  • Whisk the warm juice mixture into the bloomed gelatin until fully dissolved and smooth.

Fill and Decorate

  • Carefully pour the gelatin mixture into the lime halves.

Chill

  • Refrigerate for 3–4 hours, or until fully set.

Slice and Serve

  • Once set, slice each lime half into two wedges. Serve chilled and enjoy!
