Ingredients

Outer Gummy Shell:

  • 1 cup 100% fruit juice like cherry, grape, or pomegranate for color + flavor
  • 1/4 cup grass-fed gelatin
  • 1.5 tbsp honey or maple syrup optional, depending on juice sweetness
  • 2 tsp lemon juice brightens flavor
  • 1/2 tsp beet powder optional - to brighten the color

Filling:

  • 1 tbsp jam

Instructions

  • Pour juice into a small saucepan. Stir in gelatin and let bloom for 5 minutes.
  • After blooming, gently heat over low heat, stirring constantly until completely dissolved and smooth (do not boil).
  • Stir in honey/maple syrup (optional), lemon juice, and beet powder (optional).
  • Pour into silicone molds, filling 1/8 inch high.
  • Freeze for 5–10 minutes, just until the top is set.
  • Once the first gummy layer has set, use a small spoon or dropper to add a bit of the fruity filling to the center of each mold.
  • Top with more warm gummy mixture to seal the filling inside (reheat if it starts to thicken too much).
  • Refrigerate for at least 1 hour or until fully set.
  • Carefully pop them out and store in an airtight container in the fridge for up to 5 days.
