Outer Gummy Shell:
- 1 cup 100% fruit juice like cherry, grape, or pomegranate for color + flavor
- 1/4 cup grass-fed gelatin
- 1.5 tbsp honey or maple syrup optional, depending on juice sweetness
- 2 tsp lemon juice brightens flavor
- 1/2 tsp beet powder optional - to brighten the color
Pour juice into a small saucepan. Stir in gelatin and let bloom for 5 minutes.
After blooming, gently heat over low heat, stirring constantly until completely dissolved and smooth (do not boil).
Stir in honey/maple syrup (optional), lemon juice, and beet powder (optional).
Pour into silicone molds, filling 1/8 inch high.
Freeze for 5–10 minutes, just until the top is set.
Once the first gummy layer has set, use a small spoon or dropper to add a bit of the fruity filling to the center of each mold.
Top with more warm gummy mixture to seal the filling inside (reheat if it starts to thicken too much).
Refrigerate for at least 1 hour or until fully set.
Carefully pop them out and store in an airtight container in the fridge for up to 5 days.
