Ingredients

  • 16 oz cottage cheese
  • 1 serving unflavored collagen (optional, but it adds to the creaminess and amount of protein)
  • 2 servings chocolate protein powder
  • 2 tbsp maple syrup
  • 1/3 tsp peppermint extract
  • 1 chocolate protein bar chopped into small pieces
  • optional: whipped cream, sprinkled peppermint pieces

Instructions

  • In a blender, combine the cottage cheese, collagen (if using), protein powder, maple syrup, and peppermint extract. Taste and adjust peppermint flavor as desired.
  • Without Ice Cream Maker: Stir in the chopped protein bar pieces, transfer to a freezer-safe container, and freeze overnight. Let sit on the counter for 10 minutes before serving.
    With Ninja Creami: Pour mixture into a Creami pint container, secure the storage lid, and freeze for 24 hours. After freezing, replace the lid with the processing lid, place in the base, and select the ice cream setting. If powdery, add a little nut milk and re-spin. Create a hole in the center and add chopped protein bar pieces, then run the MIX-IN setting.
  • Scoop the ice cream into bowls, and add optional whipped cream and peppermint pieces for a festive touch. Enjoy immediately!
