Ingredients

For the caramel center:

  • 1/2 cup medjool dates soaked in hot water for 10 minutes
  • 1 tbsp peanut butter or any nut butter
  • 1 tbsp coconut oil melted

  • 1 scoop unflavored colostrum and collagen optional

For the chocolate coating:

  • 1/2 cup dark chocolate melted
  • 1 tsp coconut oil

Instructions

  • Blend together all of the caramel center ingredients until smooth and creamy. Place in the refrigerator for 15 minutes to firm.
  • Roll into bite-sized balls and place on a baking sheet lined with parchment paper. (I found it helpful to spray my hands with coconut oil so that the dough didn’t stick to my hands.) Place in the freezer for at least 30 minutes, or until the balls are solid.
  • Mix the coconut oil into the melted dark chocolate. Dip the balls into the chocolate and use a fork to remove and place on the baking sheet lined with parchment paper. Enjoy!
