Ingredients
For the caramel center:
1/2cupmedjool datessoaked in hot water for 10 minutes
1tbsppeanut butteror any nut butter
1tbspcoconut oilmelted
1/2tspvanilla extract
1 scoop unflavored colostrum and collagenoptional
For the chocolate coating:
1/2cupdark chocolatemelted
1tsp coconut oil
Instructions
Blend together all of the caramel center ingredients until smooth and creamy. Place in the refrigerator for 15 minutes to firm.
Roll into bite-sized balls and place on a baking sheet lined with parchment paper. (I found it helpful to spray my hands with coconut oil so that the dough didn’t stick to my hands.) Place in the freezer for at least 30 minutes, or until the balls are solid.
Mix the coconut oil into the melted dark chocolate. Dip the balls into the chocolate and use a fork to remove and place on the baking sheet lined with parchment paper. Enjoy!
