Jack Skellington Smoothie
Ingredients
- 1-2 Mejool date pitted
- 1 cup unsweetened nut milk
- 1 tbsp natural peanut butter
- 1/2 cup cottage cheese
- 1/4 cup riced cauliflower frozen*
- 1 serving vanilla collagen or protein powder
- dark chocolate optional
- chocolate sprinkles optional
Instructions
- Soak the dates in hot water for 5 minutes to soften (if needed). Meanwhile, draw a Jack Skeleton or Ghost face on the glass with a black dry erase marker.If desired, dip the rim of the glass in melted dark chocolate, removing excess, and then sprinkling on chocolate sprinkles. Place in the refrigerator to set.
- Add all ingredients to a blender: softened dates, almond milk, peanut butter, cottage cheese, riced cauliflower, vanilla collagen.
- Blend on high until smooth and creamy. Taste and adjust sweetness if needed by adding another date or a small drizzle of honey/maple syrup. If not cold or thick enough, add a handful of ice cubes.
- Pour into the prepared glass and enjoy immediately!
