Jack Skellington Smoothie

This smoothie is full of protein, sweetened naturally, and has a hidden veggie!

Ingredients

  • 1-2 Mejool date pitted
  • 1 cup unsweetened nut milk
  • 1 tbsp natural peanut butter
  • 1/2 cup cottage cheese
  • 1/4 cup riced cauliflower frozen*
  • 1 serving vanilla collagen or protein powder
  • dark chocolate optional
  • chocolate sprinkles optional

Instructions

  • Soak the dates in hot water for 5 minutes to soften (if needed). Meanwhile, draw a Jack Skeleton or Ghost face on the glass with a black dry erase marker.
    If desired, dip the rim of the glass in melted dark chocolate, removing excess, and then sprinkling on chocolate sprinkles. Place in the refrigerator to set.
  • Add all ingredients to a blender: softened dates, almond milk, peanut butter, cottage cheese, riced cauliflower, vanilla collagen.
  • Blend on high until smooth and creamy. Taste and adjust sweetness if needed by adding another date or a small drizzle of honey/maple syrup. If not cold or thick enough, add a handful of ice cubes.
  • Pour into the prepared glass and enjoy immediately!

Notes

*If cauliflower is not frozen, add a handful of ice cubes.
