Soak the dates in hot water for 5 minutes to soften (if needed). Meanwhile, draw a Jack Skeleton or Ghost face on the glass with a black dry erase marker.If desired, dip the rim of the glass in melted dark chocolate, removing excess, and then sprinkling on chocolate sprinkles. Place in the refrigerator to set.
Add all ingredients to a blender: softened dates, almond milk, peanut butter, cottage cheese, riced cauliflower, vanilla collagen.
Blend on high until smooth and creamy. Taste and adjust sweetness if needed by adding another date or a small drizzle of honey/maple syrup. If not cold or thick enough, add a handful of ice cubes.
Pour into the prepared glass and enjoy immediately!
