Pot of Gold Brownie Pops are so simple to make!

I love that these brownie pops require no baking! Just mix together a handful of ingredients to make the brownie dough, roll into balls, insert a popsicle stick, dip in chocolate, add gold sprinkles, and enjoy!

Pot of Gold Brownie Pops Ingredients & Accessories

Dark chocolate:  I love how the ifiProvisions chocolate melts, so that is what I typically use. I have a 15% off discount (HEALTHYHOLME) if you want to try! 

Gold sprinkles: I used natural gold sprinkles from ifiProvisions

Lollipop sticks: These are the lollipop sticks I got off of Amazon. 

Baking sheet lined with parchment paper: For this recipe I used a half sheet pan. The parchment paper makes sure that the chocolate doesn’t stick to the pan.

Storage Tips

The brownie pops can be stored up to a week in an airtight container in the fridge. I have also frozen the brownie dough a couple weeks ahead of time.

FAQs

My chocolate is too thick, what can I do?

If your chocolate is too thick, I recommend adding a 1/2 tsp of coconut oil to thin it out. 

My lollipop sticks are coming out of the brownie ball when I dip it in chocolate. How can I fix this? 

Make sure you don’t skip the step where you insert the popsicle stick into chocolate and then into the brownie ball and refrigerate. If you did this, try inserting the chocolate covered lollipop sticks again and freezing this time. Then dip immediately after taking out of the freezer.

These Pot of Gold Brownie Pops are such a fun St. Patrick's Day treat! They're no bake and only require a handful of ingredients!

  • 1/3 cup cacao powder
  • 1/4 cup maple syrup
  • 1/2 cup natural peanut butter
  • 1 tbsp almond flour

Brownie Dough Ingredients

  • 1/2 cup dark chocolate melted
  • 1 tbsp gold sprinkles

Instructions

  • Mix together the brownie dough ingredients and roll into 6 balls.
  • Dip popsicle sticks in melted chocolate, insert into the balls, and place in the fridge for 10 minutes.
  • Holding onto the stick, dip the ball in the chocolate, tapping twice to remove excess chocolate. Place pops stick side up on a baking sheet lined with parchment paper. Place in the freezer to set.
  • After about 10 minutes, or whenever the chocolate has hardened, add a little melted chocolate to the flat side of the ball (the part that was lying on the baking sheet) and add gold sprinkles. Enjoy!
