Cupcake Ingredients

  • Lifeway Kefir Plain Organic Kefir – Kefir is a tart and tangy cultured dairy drink packed with protein, calcium, and 12 live and active probiotic cultures.
  • Coconut Oil – Use refined coconut oil if you do not like the taste of coconut. Refined coconut oil is tasteless. 
  • Eggs 
  • Maple Syrup 
  • Vanilla Extract 
  • Peppermint Extract
  • Cacao Powder – I prefer cacao powder to cocoa powder since it is less processed
  • Baking Powder
  • Coconut Flour

Is there a quicker way to make this cupcake cake?

Totally! You can buy a box mix, or even premade cupcakes. Then you just have to ice them! You can also buy premade icing so all you need to do is decorate and enjoy!

Yes, I usually bake the cupcakes a couple days ahead of time and keep them in an air-tight container in the refrigerator until I’m ready to decorate. I typically decorate the night before or the day of the party. 

Can you freeze these cupcakes? 

Yup! Any leftovers you can freeze for later!

Ingredients

Peppermint Mocha Cupcake Ingredients

  • 2.5 tbsp Lifeway Kefir Plain Organic Kefir
  • 1/3 cup coconut oil melted
  • 3 eggs
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/4 cup cacao powder
  • 1 tsp baking powder
  • 1/3 cup coconut flour

Sweet Cream Cheese Frosting Ingredients

  • 8 oz cream cheese
  • 3 tbsp grass-fed butter melted
  • 3 tbsp maple syrup

Other Ingredients

  • 2 dark chocolate chips
  • natural red/pink food dye

Instructions

  • Preheat the oven to 350F. Line a mini muffin tin with 30 cupcake liners.
  • Blend together the kefir, coconut oil, eggs, maple syrup, and vanilla until smooth. Blend in the cacao powder, baking powder, and coconut flour.
  • Distribute evenly between the cupcake liners. Bake for 15-20 minutes, or until a toothpick comes out clean.
  • While baking, blend together the frosting ingredients. Separate into two bowls. Add a little pink to one bowl for the face, but keep the other bowl white. Place in the fridge to thicken.
  • Once cupcakes have cooled, arrange cupcakes as in the video. Cover the middle cupcakes with the slightly pink icing. Pipe the white around the face for the beard and fur. Dye the rest of the pink a deeper shade of pink or red for the hat. Pipe swirls on for the hat. Add a white pom pom on the hat, a pink/red mouth, white mustache, and chocolate chip eyes.
