This Gnocchi, Sausage, & Veggie Sheet Pan Dinner is a new favorite dinner in our house! Only 5 main ingredients, made in less than 30 minutes, and kid-approved, this is the perfect weeknight meal!

My kids are broccoli and pepper fans (plus we had a bunch of ripe tomatoes in the garden), but feel free to use whatever veggies your family likes! We used already cooked sausage, but feel free to use your favorite protein.

This Gnocchi, Sausage, & Veggie Sheet Pan Dinner has only 5 main ingredients, made in less than 30 minutes, and kid-approved, making it the perfect weeknight meal!

Servings: 4 people

Ingredients

  • 2 1/2 cups of uncooked gnocchi
  • 1 small head broccoli, chopped into florets (about 3 cups)
  • 2 orange peppers, seeded and chopped (about 2 1/2 cups)
  • 1 cup cherry tomatoes
  • 1 package of already cooked sausage
  • ¼ cup olive oil
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

  • Preheat oven to 425F.
  • Add all of the ingredients to a large pan and mix together.
  • Bake in the oven for 15-20 minutes, stirring halfway, or until the gnocchi is fully cooked.
