Edible Cookie Dough

This edible cookie dough is made with chickpeas and sweetened only with fruit, but you would never know!

Ingredients

  • 1 can chickpeas (garbanzo beans), drained & rinsed
  • 1/2 cup peanut butter (or your favorite nut/seed butter)
  • 3/4 cup dates, soaked in hot water for 5 minutes
  • 1/2 tsp vanilla
  • 1/4 cup mini chocolate chips

Instructions

  • In a food processor to blend all of the ingredients, except for chocolate chips, together until smooth.
  • If the dough is warm, let cool, then mix in the chocolate chips. Enjoy as is, or rolled into balls!
