Edible Cookie Dough
This edible cookie dough is made with chickpeas and sweetened only with fruit, but you would never know!

- 1 can chickpeas (garbanzo beans), drained & rinsed
- 1/2 cup peanut butter (or your favorite nut/seed butter)
- 3/4 cup dates, soaked in hot water for 5 minutes
- 1/2 tsp vanilla
- 1/4 cup mini chocolate chips
In a food processor to blend all of the ingredients, except for chocolate chips, together until smooth.
If the dough is warm, let cool, then mix in the chocolate chips. Enjoy as is, or rolled into balls!
