Black Bean Quinoa Burgers

Ingredients

  • 1 (15 ounce) can black beans, rinsed and drained
  • ¼ cup tri-color quinoa
  • ½ cup water (or broth)
  • ¼ cup minced yellow bell pepper
  • 1/4 cup frozen spinach, thawed and excess water squeezed out
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 egg

Instructions

  • Bring the quinoa and water to a boil in a small saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa the water has been absorbed, about 10-15 minutes.
  • Meanwhile, roughly mash the black beans with a fork leaving some whole black beans.
  • Mix the black beans, pepper, spinach, quinoa, spices, and egg together and form into 5 patties.
  • Cook the patties in a lightly greased air fryer for 10 minutes at 350 degrees, flipping half way.
