Tips For Making Perfect Snowman Marshmallows

Use good-quality gelatin
Grass-fed gelatin creates the perfect fluffy texture. Lower-quality gelatin may result in a softer or stickier marshmallow.

Beat long enough
The mixture should turn thick, white, and fluffy like marshmallow fluff. Under-whipping results in marshmallows that don’t hold their shape.

Grease your spatula
Honey marshmallow batter is sticky. Lightly greasing your spatula (and hands!) makes spreading and smoothing much easier.

Let them fully set
One hour works, but two hours gives the cleanest cuts—especially if you want perfect snowman faces.

Use edible markers for easy decorating
They work great on these marshmallows! If using chocolate, make sure the marshmallows are fully cooled so the faces don’t melt.

Ingredients

  • 1 1/2 tbsp grass-fed gelatin
  • 1/2 cup water divided
  • 1/2 cup raw honey
  • Optional decorating supplies: melted chocolate for eyes and buttons, natural food coloring, or edible markers.
  • Optional: monkfruit powdered sugar or tapioca flour for dusting marshmallows

Instructions

Bloom the gelatin

  • Add 1/4 cup water to a mixing bowl. Sprinkle 1 1/2 tablespoons gelatin over top. Let it sit for a few minutes until it thickens to an applesauce-like texture.

Heat the honey mixture

  • In a small saucepan, combine the remaining 1/4 cup water and 1/2 cup honey. Heat over medium-high, whisking frequently, for about 5 minutes.

Whip into marshmallow fluff

  • Carefully pour the hot honey mixture into the bowl with the bloomed gelatin. Beat on high speed for about 8 minutes, or until the mixture becomes thick, fluffy, and white.

Spread and set

  • Transfer the mixture into a greased or parchment-lined dish. Smooth the top with a greased spatula. Let it set at room temperature for at least 1 hour.

Cut and decorate

  • Use a small round cookie cutter to create “snowman heads” or cut into squares. If too sticky, dust with monkfruit powdered sugar or tapioca flour.
  • Decorate with melted chocolate or edible markers to make eyes, buttons, and a tiny carrot nose!
