Homemade Snowman Marshmallows

These adorable Snowman Marshmallows are made with just 3 simple, wholesome ingredients: grass-fed gelatin, water, and raw honey. They’re naturally sweetened, fluffy, and perfect for topping hot chocolate or gifting during the holidays. Kid-friendly, corn-syrup-free, and so fun to decorate!

Ingredients

  • 1 1/2 tbsp grass-fed gelatin
  • 1/2 cup water divided
  • 1/2 cup raw honey
  • Optional decorating supplies: melted chocolate for eyes and buttons, natural food coloring, or edible markers.
  • Optional: monkfruit powdered sugar or tapioca flour for dusting marshmallows

Instructions

Bloom the gelatin

  • Add 1/4 cup water to a mixing bowl. Sprinkle 1 1/2 tablespoons gelatin over top. Let it sit for a few minutes until it thickens to an applesauce-like texture.

Heat the honey mixture

  • In a small saucepan, combine the remaining 1/4 cup water and 1/2 cup honey. Heat over medium-high, whisking frequently, for about 5 minutes.

Whip into marshmallow fluff

  • Carefully pour the hot honey mixture into the bowl with the bloomed gelatin. Beat on high speed for about 8 minutes, or until the mixture becomes thick, fluffy, and white.

Spread and set

  • Transfer the mixture into a greased or parchment-lined dish. Smooth the top with a greased spatula. Let it set at room temperature for at least 1 hour.

Cut and decorate

  • Use a small round cookie cutter to create “snowman heads” or cut into squares. If too sticky, dust with monkfruit powdered sugar or tapioca flour.
  • Decorate with melted chocolate or edible markers to make eyes, buttons, and a tiny carrot nose!
