Servings: 15 snowman marshmallows
- 1 1/2 tbsp grass-fed gelatin
- 1/2 cup water divided
- 1/2 cup raw honey
- Optional decorating supplies: melted chocolate for eyes and buttons, natural food coloring, or edible markers.
- Optional: monkfruit powdered sugar or tapioca flour for dusting marshmallows
Heat the honey mixture
In a small saucepan, combine the remaining 1/4 cup water and 1/2 cup honey. Heat over medium-high, whisking frequently, for about 5 minutes.
Whip into marshmallow fluff
Carefully pour the hot honey mixture into the bowl with the bloomed gelatin. Beat on high speed for about 8 minutes, or until the mixture becomes thick, fluffy, and white.
Cut and decorate
Use a small round cookie cutter to create “snowman heads” or cut into squares. If too sticky, dust with monkfruit powdered sugar or tapioca flour.
Decorate with melted chocolate or edible markers to make eyes, buttons, and a tiny carrot nose!
