2 Mins read

If you love the benefits of sourdough and want a high-protein breakfast, these sourdough protein waffles are a must-try! Not only do they help reduce food waste by using sourdough discard, but they’re also packed with protein from Greek yogurt, eggs, and vanilla protein powder. The simple ingredients keep them light yet hearty, making them perfect for meal prep or a weekend brunch. Plus, they’re quick and easy to whip up—just mix, pour, and cook for deliciously crisp, golden waffles in minutes!

Sourdough Protein Waffles Ingredients

Sourdough Discard: Adds a slight tangy flavor and gut-friendly prebiotics

Almond Milk: A dairy-free option that keeps the batter light

Greek Yogurt: High in protein and probiotics for gut health

Eggs: Provide structure, protein, and healthy fats

Vanilla Protein Powder: Boosts the protein content for a more filling breakfast. I used PeachieSpoon Grass-Fed Vanilla Protein. You can use my discount code: HealthyHolme12

Baking Powder: Helps the waffles rise and stay fluffy

Almond Flour & Gluten-Free 1:1 Flour: A blend that keeps the waffles nutrient-dense while maintaining a great texture

Tips for the best Sourdough Protein Waffles

  • Let the batter rest for a few minutes before cooking to allow the flour to absorb the liquid.
  • Preheat the waffle iron completely to get crispy, golden waffles.
  • Grease the waffle iron lightly to prevent sticking, especially with gluten-free flours.
  • Don’t overmix the batter—a few lumps are okay and will keep the waffles tender.
  • Top with protein-packed options like nut butter, Greek yogurt, or a sprinkle of hemp seeds.

FAQs

Can I use all-purpose flour instead of gluten-free flour?
Yes! You can swap the gluten-free 1:1 flour with all-purpose flour if you don’t need a gluten-free option.

Can I make these dairy-free?
Absolutely! Swap Greek yogurt for a thick dairy-free yogurt and use almond milk or another plant-based milk.

What kind of protein powder works best?
A vanilla-flavored protein powder works best for a balanced flavor, but you can use any protein powder you prefer.

How do I store and reheat these waffles?
Store leftover waffles in an airtight container in the fridge for up to 3 days. Reheat in a toaster or oven for a crispy texture.

Can I freeze them?
Yes! Freeze waffles in a single layer, then transfer them to a freezer bag. Reheat from frozen in a toaster or oven.
