- 1/4 cup monkfruit powdered sugar (for dusting)
- 1/4 cup organic matcha divided
- 1 1/2 tbsp grass-fed gelatin
- 1/2 cup water divided
- 1/2 cup raw honey
Instructions
- Line a baking dish with parchment paper and lightly grease. Mix monkfruit powdered sugar with 2 tablespoons of matcha and lightly coat the parchment paper.
- Combine 1 1/2 tablespoons gelatin with 1/4 cup water and let it sit for several minutes until it forms a thick, applesauce-like consistency.
- In a small saucepan, heat 1/4 cup water and 1/2 cup honey over medium-high heat, whisking frequently for about 5 minutes.
- Add the bloomed gelatin and hot honey mixture to a mixing bowl. Beat on high speed for about 8 minutes, until the mixture becomes fluffy and white.
- Reduce the mixer speed to low and add 2 tablespoons of matcha and 1 teaspoon vanilla extract. Mix until evenly combined, then return to high speed to ensure everything is well incorporated.
