This spooky Jack Skellington Protein Smoothie is the perfect balance of sweet and healthy! Packed with protein, naturally sweetened with dates, and even sneaking in some veggies, it’s a fun and festive way to enjoy a nutritious Halloween treat.

Jack Skellington Smoothie Ingredients & Accessories

Peanut Butter: I use natural peanut butter made with just organic peanuts. This ensures there are no added sugars or unhealthy fats. Peanut butter is rich in healthy fats, protein, and vitamins like Vitamin E, magnesium, and potassium. 

Pitted Dates: These provide natural sweetness without the need for refined sugars. Dates are rich in fiber, which helps with digestion, and are packed with essential minerals like potassium and magnesium, making them a great energy booster.

Vanilla Collagen: Collagen is a protein that supports healthy hair, skin, nails, and joints. Adding vanilla collagen gives this smoothie a protein boost while helping to maintain skin elasticity and promote gut health.

Unsweetened Almond Milk: Low in calories and sugar, unsweetened almond milk is a great alternative to regular milk. It’s rich in Vitamin E, a powerful antioxidant that supports skin health, and is naturally lactose-free, making it a perfect option for those with dairy sensitivities.

Riced Cauliflower: Cauliflower is a nutrient-dense vegetable that adds fiber, Vitamin C, and antioxidants to the smoothie without impacting the flavor. It helps keep the smoothie low in carbs while adding a hidden veggie boost for extra nutrition. Also, it makes the smoothie thick.

Jack Skellington Smoothie

This smoothie is full of protein, sweetened naturally, and has a hidden veggie!

Ingredients

  • 1-2 Mejool date pitted
  • 1 cup unsweetened nut milk
  • 1 tbsp natural peanut butter
  • 1/2 cup cottage cheese
  • 1/4 cup riced cauliflower frozen*
  • 1 serving vanilla collagen or protein powder
  • dark chocolate optional
  • chocolate sprinkles optional

Instructions

  • Soak the dates in hot water for 5 minutes to soften (if needed). Meanwhile, draw a Jack Skeleton or Ghost face on the glass with a black dry erase marker.
    If desired, dip the rim of the glass in melted dark chocolate, removing excess, and then sprinkling on chocolate sprinkles. Place in the refrigerator to set.
  • Add all ingredients to a blender: softened dates, almond milk, peanut butter, cottage cheese, riced cauliflower, vanilla collagen.
  • Blend on high until smooth and creamy. Taste and adjust sweetness if needed by adding another date or a small drizzle of honey/maple syrup. If not cold or thick enough, add a handful of ice cubes.
  • Pour into the prepared glass and enjoy immediately!

*If cauliflower is not frozen, add a handful of ice cubes.
