The Surprise Is So Fun!

The brownie cups are delicious and festive with the natural green icing, but the surprise gold inside totally makes it! My little leprechauns were so excited about the hidden sprinkles!

Pot of Gold Brownie Ingredients & Accessories

Brownies: If you’re short on time, you can use any brownie mix, but I made my chickpea brownies for added protein. They are so fudgy and are perfect if you prefer grain-free recipes. 

Frosting: You could use pre-made frosting or my sweet cream frosting requires just a handful of ingredients and it’s refined sugar free!

Sprinkles: The natural green dye, gold sprinkles, and green sprinkles are all from ifiProvisions. I love that they dye everything naturally. I have a 15% off discount (HEALTHYHOLME) if you want to try! 

Silicone cupcake pan: I prefer silicone cupcake pans so that the brownies can easily pop out. This is the pan I use.

Storage Tips

I recommend storing these Hidden Pot of Gold Brownie Cups in an air tight container in the fridge. The brownies are also able to be frozen and then thawed to decorate later.

These Hidden Pot of Gold Brownie Cups are such a fun St. Patrick's Day dessert! The gold inside is such an exciting surprise!

Ingredients

For the frosting

  • 1 can chickpeas drained and rinsed
  • 1 cup pitted dates soaked in hot water for 5 minutes
  • 1/2 cup peanut butter
  • 1/3 cup cacao powder
  • 1/3 cup unsweetened applesauce
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

For the brownies

  • 8 oz cream cheese
  • 3 tbsp grass-fed butter
  • 3 tbsp maple syrup
  • natural green dye

Other ingredients

  • gold sprinkles
  • green sprinkles (optional)

Instructions

  • Preheat the oven to 350F and lightly grease a silicone muffin pan.
  • Process together all of the brownie ingredients until smooth. Divide the batter evenly between 10 muffin cups. Use a spatula to smooth to tops and bake for 25 minutes. Let cool.
  • While the cupcakes are baking, mix icing ingredients together.
  • Once the brownies have cooled, use a small spoon to remove the center of each brownie. Fill with gold sprinkles. Add the brownie on top and cover with icing and green sprinkles, if desired. Enjoy!

Notes

These are best stored in an airtight container in the fridge.
