Ingredients
For the frosting
1canchickpeasdrained and rinsed
1cuppitted datessoaked in hot water for 5 minutes
1/2cuppeanut butter
1/3cupcacao powder
1/3cupunsweetened applesauce
1tbspcoconut oilmelted
1tspvanilla extract
1/2tspbaking soda
1/2 tsp baking powder
For the brownies
8ozcream cheese
3tbspgrass-fed butter
3tbspmaple syrup
natural green dye
Other ingredients
gold sprinkles
green sprinkles(optional)
Instructions
Preheat the oven to 350F and lightly grease a silicone muffin pan.
Process together all of the brownie ingredients until smooth. Divide the batter evenly between 10 muffin cups. Use a spatula to smooth to tops and bake for 25 minutes. Let cool.
While the cupcakes are baking, mix icing ingredients together.
Once the brownies have cooled, use a small spoon to remove the center of each brownie. Fill with gold sprinkles. Add the brownie on top and cover with icing and green sprinkles, if desired. Enjoy!
