These Paleo Gingerbread Cookies are sweetened only with fruit, but you would never know it! With just the right amount of spice and sweetness, they’re perfect for dessert and with your morning coffee.
You can make regular round cookies, but they’re also the perfect consistency for rolling out and cutting into gingerbread men or your favorite holiday shapes. My kids love helping me decorate them and package them for the neighbors!

Ingredients
- 1/2 cup pitted dates soaked in hot water for 5 minutes
- 1 tsp vanilla extract
- 2 tbsp coconut oil melted
- 1 egg
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 tsp ground ginger
- 2 tsp cinnamon
- 1/2 cup tapioca flour
- 1 1/2 cups almond flour
- icing (optional)
Instructions
- Preheat the oven to 350F. Line a baking sheet with parchment paper or a silicone baking mat.
- In a food processor, process together the dates (excess water squeezed out), vanilla, and coconut oil on high until smooth, stopping occasionally to scrape down the side. Blend in the egg.
- If the dates have still not completely blended, blend in one cup of almond flour. Then add the remaining ingredients.
- Use a tablespoon cookie scoop to form balls and then flatten them with a spatula. If making cutout cookies, roll the dough out on parchment paper until it is 1/4 inch thick and then cut out the gingerbread men.
- Bake the cookies on the prepared baking sheet for 10 minutes.
- Cool completely before removing the cookies with a spatula. If desired, decorate the gingerbread men. Enjoy!
