Paleo Gingerbread Cookies (sweetened only with fruit)

Whether you wan to cut these up into gingebread men or just roll them up into round cookies, these are the perfect holiday dessert!

Ingredients

  • 1/2 cup pitted dates soaked in hot water for 5 minutes
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil melted
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • 1/2 cup tapioca flour
  • 1 1/2 cups almond flour
  • icing (optional)

Instructions

  • Preheat the oven to 350F. Line a baking sheet with parchment paper or a silicone baking mat.
  • In a food processor, process together the dates (excess water squeezed out), vanilla, and coconut oil on high until smooth, stopping occasionally to scrape down the side. Blend in the egg.
  • If the dates have still not completely blended, blend in one cup of almond flour. Then add the remaining ingredients.
  • Use a tablespoon cookie scoop to form balls and then flatten them with a spatula. If making cutout cookies, roll the dough out on parchment paper until it is 1/4 inch thick and then cut out the gingerbread men.
  • Bake the cookies on the prepared baking sheet for 10 minutes.
  • Cool completely before removing the cookies with a spatula. If desired, decorate the gingerbread men. Enjoy!
