Looking for a tasty, nutrient-dense lunchbox snack this week? These Blarney Stone Energy Balls are the perfect snack to make for St. Patricks’s Day (or any day)! They’re sweetened only with fruit, too!

Spirulina, goji berries, and chia seeds are packed with powerful antioxidants that improve immunity, plus there are so many added benefits:

🌟 Spirulina is one of the most nutrient-dense foods on the planet, packed with iron, calcium, and protein.
🌟 Goji berries are a good source of vitamins, minerals, and protein.
🌟 Chia seeds are high in protein, bone nutrients, and fiber.
🌟 Maca is high in vitamins and minerals. It contains flavonoids, which have been shown to improve mood and reduce anxiety.
The energy balls get their festive green color from spirulina. Often hubby can’t stand anything with spirulina because he thinks it tastes like swamp, but not these! These energy balls are a favorite in our house and I make them often for road trips, school lunches, and a meal-prep snack.

Ingredients

  • 1 1/4 cup pitted dates, soaked in hot water for 5 minutes
  • 3/4 cup raw almonds
  • 1/4 cup raw cashews
  • 1/4 cup goji berries
  •  1/4 cup unsweetened coconut flakes
  • 1 tablespoon chia seeds
  • 2 1/2 tsp spirulina powder
  • 1 tbsp maca powder (optional)

Instructions

  • Process all of the ingredients together. If not sticking together, add 1/2 tsp of water.
  • Roll into bite-sized balls and enjoy!
