The energy balls get their festive green color from spirulina. Often hubby can’t stand anything with spirulina because he thinks it tastes like swamp, but not these! These energy balls are a favorite in our house and I make them often for road trips, school lunches, and a meal-prep snack.
Blarney Stone Energy Balls
Ingredients
- 1 1/4 cup pitted dates, soaked in hot water for 5 minutes
- 3/4 cup raw almonds
- 1/4 cup raw cashews
- 1/4 cup goji berries
- 1/4 cup unsweetened coconut flakes
- 1 tablespoon chia seeds
- 2 1/2 tsp spirulina powder
- 1 tbsp maca powder (optional)
Instructions
- Process all of the ingredients together. If not sticking together, add 1/2 tsp of water.
- Roll into bite-sized balls and enjoy!
