Ingredients
- 1 (15 ounce) can black beans, rinsed and drained
- ¼ cup tri-color quinoa
- ½ cup water (or broth)
- ¼ cup minced yellow bell pepper
- 1/4 cup frozen spinach, thawed and excess water squeezed out
- 1/4 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1 egg
Instructions
- Bring the quinoa and water to a boil in a small saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa the water has been absorbed, about 10-15 minutes.
- Meanwhile, roughly mash the black beans with a fork leaving some whole black beans.
- Mix the black beans, pepper, spinach, quinoa, spices, and egg together and form into 5 patties.
- Cook the patties in a lightly greased air fryer for 10 minutes at 350 degrees, flipping half way.
