Peanut Butter Banana Baked Oatmeal

This Peanut Butter Banana Baked Oatmeal is the perfect breakfast meal prep for busy mornings. It’s so easy, that Evelyn was able to add all of the ingredients!
Baked oatmeal is one of my favorite ways to meal prep for busy mornings. I make the oatmeal on the weekend, and then I just cut pieces and heat throughout the week. The kids loved this peanut butter flavor and didn’t even notice the baked oatmeal was sweetened only with fruit!


✨ PEANUT BUTTER BANANA BAKED OATMEAL ✨

Ingredients:

  • 1 ½ cups oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3 overripe bananas, mashed
  • ¼ cup creamy peanut butter
  • 1 1/2 tsp vanilla extract
  • 1 large egg
  • 1 cup almond milk, unsweetened
  • optional toppings: peanut butter, sliced bananas, @bobsredmill Peanut Butter and/or Maple Homestyle Granola, maple syrup
    Instructions:
  1. Preheat oven to 350 degrees F. Grease a 9×9” square baking pan.
  2. In a large bowl mix the almond butter, mashed banana, peanut butter, vanilla extract, and egg together until combined.
  3. Add the oats, baking powder, cinnamon and mix together.
  4. Pour the mixture into the pan and bake for 25 minutes, or until the top slightly springs back when touched and the edges turn golden brown.
  5. If desired, add drizzles of peanut butter, sliced bananas, and granola. Cut into squares an enjoy!
